Debbie’s Healthier Macaroni and Cheese

1 box of macaroni or other pasta – Debbie’s favorite is farfalle

½ head cauliflower

3 Tomatoes

1 green pepper

2 Eggs

1 ½ cups milk

1 ½ -2 cups cheddar cheese

1 ½- 2 cups flavorful cheese ( gouda or pepper jack)

Grated Parmesan cheese to sprinkle

Salt and pepper

Grate the cheese

Mix the egg and milk in a big bowl

Put 2/3rd of the cheese into the milk and egg and mix,

Add a dash of salt and pepper

Cut cauliflower into small pieces, boil for 3 minutes

Boil pasta until halfway done

Put pasta, and cauliflower in casserole dish and mix with the egg/cheese/milk mixture

Bake for 20 minutes at about 220

Slice tomatoes and green pepper into circles

Take casserole out of oven after 20 minutes and stir

Taste to see if you need more cheese, if so, mix in the some of the remaining 1/3 cup

Put tomatoes on top and then sprinkle with the remaining cheese and the grated Parmesan.
