Quinoa and avocado salad

1 cup quinoa
2 cups avocado cut into cubes
½ cup peeled and diced cucumbers
1/3 cup chopped parsley
2 Tablespoons olive oil
1-2 Tablespoons red wine vinegar
Salt and pepper to taste
Cook quinoa with water for 20 minutes, strain and cool down to room temperature. Combine all the other ingredients with the quinoa and taste. Adjust seasonings to taste.
Add optional ingredients if you desire such as:
Arugula
Slivered Almonds
Shredded Carrots
